Fudgy Brownies

  • 1/3 cup butter (melted)
  • 1 cup date puree
  • 2 large eggs
  • 1 tsp. pure vanilla extract

Whisk together in a bowl.

  • 1 cup almond flour
  • 1/3 cup cocoa powder
  • 1/2 tsp. baking soda
  • pinch of salt

Blend dry ingredients and fold into date mixture until fully incorporated. The batter will be thick.

Using a 8×8 baking pan lined with parchment paper and scoop batter into pan. Spread evenly.

Bake in a 350°f oven for 25-30 minutes. To test for doneness using a toothpick, insert in center. It should come out with a few moist crumbs. To test by touching center lightly, batter should spring back. Remove from oven and let cool.

These brownies are good without any topping. If you would like to jazz them up you can add Chocolate Cream Cheese Icing. (see photo)
